30 Orecchiette with broccoli rabe and spicy caramel


Cook Time



320g Pure Italian Pasta

400g Turnip greens 
80g sugar 
1 Garlic clove

1pc Chili pepper 
QS Ice 
QS Extra virgin olive oil

QS Salt 

Step 1:

Cook the broccoli in boiling water and finish cooking immerse in ice water to cool them; stop the cooking and preserve the bright green color.

Step 2:

Sauté with extra virgin olive oil, garlic and incorporate the peaks previously dried and cut. In a pan melt the sugar with the chili by adding two tablespoons of water.

Step 3:

Cook the Pure Italian Pasta in salted water, drain al dente. Toss the pasta with broccoli adding a little 'cooking water. Serve and pour over the hot caramel.

Serve and enjoy!
